Thread: Can I interest anyone in some FOOD?

Re: Can I interest anyone in some FOOD?

I hate olives but love tampenade. WHAT'S UP WITH THAT?

If I'm making bison burgers, do I need to add some fat to the meat before cooking? A bunch of the recipes I saw say to put cheese or butter in with the meat before grilling... I'm on weight watchers so that will just eliminate the healthiness of the meat for me. (can't do a lot of fat) But... I don't want to dry them out, either. Anyone have a good buffalo burger recipe that's moist but doesn't involve adding extra fat?

Yes, a classic dilemma faced by turkey burger lovers everywhere. My advice, sear the fuck out of that fucker (you can use a bit of Pam for this) and then broil in the the oven for a short time to cook the inside. I'd add a little bit of chicken stock (or liquid of choice) in the bottom of the pan.

Yeah, I'd say Pam is the way to go. My wife and I pretty much eliminated red meat from our diet last year, and have moved to ground Turkey for every single application that would normally call for beef. In the beginning we both said we missed a little bit of the fat content...but over time we found ways (like using cooking spray) to get some of that flavor back.

Also, chicken stock is definitely another way to add that flavor. I'd recommend low-sodium stock though, just so you don't cut fat just to add a shit load of salt that will add to water retention.

I usually add yogurt to turkey burgers or bbq sauce. If I'm doing curry flavor burgers, I add the yogurt. Or grated onion. It just seemed like every bison recipe had butter or oil mixed in.

PS. Weight Watchers is the only eating plan that has ever worked for me. It really makes you think about portions and gives me balance in my diet. So, I can eat a huge bagel for breakfast one day, but I know that I just fucked the rest of my points for that day so I have to be conservative with the rest of the foods I eat. Or if I eat want to eat pizza on Friday I have to save up my points and be good during the rest of the week. Or work out. But unfortunately the working out rarely happens.

I actually think Weight Watchers would probably work well for someone like me as well. To have that literal connection to your food (Point System) is a big factor in realizing just how much I eat during a day. I lost about 20 pounds last year doing EA Active workouts on my Wii and by really changing my diet...my hope is that the rest of the 50+ pounds I'm wanting to lose will come off by the end of the year in the same fashion. I actually lost 30 pounds last year, but put 10 right back on during the holidays, so I know I can do it, but it's a daily challenge for me, for sure.

Anyway, adding yogurt sounds AWESOME. Also since mustard literally has either zero or very few calories, it's a great way to add flavor as well.

Speaking of tapenade, I use anchovies in mine, but the western versions of anchovy are all really salty. I have to imagine that's not what they really taste like because anchovies are a lot less salty when you buy them at an Asian supermarket. However, those anchovies are dried. In conclusion, where can I buy unsalted, undried anchovy? I think that would also be good on pizzas.

Adding grated onion and cooking over grated onion (white castle style) helps. Since I've started trimming and grinding my own beef all of my hamburger is as lean as I can make it like 98/2. So there's some worcestershire/onion action in all of my burger (save for the stuff that get's taco-fied or chili-fied.) Egg can help a little too, and it's 2 WW points per egg per pound...

Do we need an ASTWW thread? Keeping track of what I eat is the only thing that keeps me from being a bigger, fatter, pig. I've lost 50 pounds (currently only 30 down due to not tracking/eating like crap during Tish's pregnancy) but it sure as hell works when I do it. Knowing I can have a real Pastrami sandwich when I want it is a good thing.

I'm still on my bison kick. Had bison burgers for late-lunch today with Iberico cheese. Fucking fantastic.

Are you Comanche or what? I've never met anyone so excited over dry beef.

For a birthday party tonight I made prosciutto wrapped shrimp with a pear bourbon glaze. They got wolfed down real quick.

Adding some egg whites to the mix might help and fall with in weight watchers guide lines.

I made Tikka Masala recently and had to buy big tub of plain yogurt.

It was amazing how quickly it tenderized the chicken...and now I have something to do with the rest of it besides stir in honey

Yeah poultry marinated in yogurt is fantastic. On the grill, too.

I just made my "Colorful Spinach"

2 boxes frozen spinach defrosted and drained, 3 eggs or egg beaters or egg whites or whatever, 1/4 cup of feta cheese, 1 grated carrot, 1 clove minced garlic, about 1/4 cup of diced bell pepper (I use yellow or orange) and some oregano, salt and pepper. Mix it together and top with parmesan cheese and bake in a small greased baking dish at 350 until it looks done. You can tell when it's done. We're going to eat it later with pork roast but it makes a good meal on its own.

I made the discovery of the decade (so far) yesterday at Costco: Tortillaland brand uncooked flour tortillas. A pack of 44 tortillas is $6.29. Cook them for 30 seconds on each side and they are delicious!
