When I cook for my vegetarian aunt I like to make her a curried lentil stew. I think what makes it extra nice is to grind and toast your own spices. My stew generally has onions, carrots, dino kale (or other hearty green), potatoes, lentils, vegetable stock, curry powder, red pepper flakes and coconut milk. Onions sauteed in olive oil, then the spices, then the thick part of the coconut milk. When that's fried a while I add the carrots, the greens and then the stock. When it's aboilin' I add the lentils and after a while the carrots and I finish it with the rest of the coconut milk to taste.

I had pretty much everything but plain yogurt on hand already, and it was really easy overall. I also broiled the chicken instead of grilling, since I'm lazy. I'm sure if you just substitute pan-fried tofu or something instead of the chicken, it'll turn out great.
If I were to make it again, I'd probably cut down on the cumin a little (1 1/2 teaspoons in the sauce instead of two, perhaps), add some more ginger and maybe a little sugar. That's my own taste, though. I can't get enough ginger, and I just tend to like sweeter sauces.
And it was nice to have a big thing of leftover plain yogurt on hand. A little bit of honey and granola, and it's a great snack.

Saag Paneer can be made with firm tofu instead of Paneer, though I would pan fry it to stop it from crumbling.

Other standards like chana masala, aloo gobi, or masoor daal are pretty reliably good from any recipe that doesn't call for items you can't find in an Indian supermarket.

Nice. I hope they're making them in XXXL, because after all the suggestions we've been getting I'm going to be expanding exponentially in the next few months.
Just posted an update with our list of possibilities for another meal next week, including a poll. Options include two of the spots mentioned earlier, and Scammy has also thrown me a tasty option via Facebook that we may try in the near future.

In Amsterdam they put evaporated milk in their coffee! They sell it in civilized bottles instead of stupid cans and it's everywhere! And it's delicious! I'm usually a die-hard half-n-half user but this stuff is like crack! WHY DON'T WE HAVE THIS TREND IN OUR COUNTRY I AM FEELING INFERIOR FROM A CULINARY PERSPECTIVE!
Also, I had pastries for lunch and dinner yesterday and I like this place so much I've started stealing condiment packets just because I think they're adorable.

The other night I stuck a roast beef (I can't remember what kind... a cheap one) in a crock pot with some red wine, a can of tomatoes, some garlic cloves and some whole mushrooms. Cooked the hell out of it. Then I let it sit in the fridge with the juices. Skimmed the fat off the next day and reheated it.
Then I served that with this high-fiber whole wheat couscous. Shredded up the meat and chopped up the veggies and mixed it together like a big meat and couscous salad. It was amazing!
Also, if you go to Amsterdam, you should eat the Dutch Rice Dish at Moeders. It was one of our favorite meals while we were there!

I just made Ilan's "Fideos with Saffron and Clams" from Top Chef season 2. It was pretty delicious, but it didn't really work too well as a standalone entree. I also think it can be reworked to exclude its 2 cups of cream (in a recipe that serves four).
Salted caramel is the greatest thing in the world.
