Now armed with further information, I can say you probably won't like Bioshock. Or Dead Space. Linearity issues.
It's good that you don't have an Xbox 360, because if you have a trouble with Uncharted 2's cutscenes, you would hate Mass Effect and Mass Effect 2. Assassin's Creed 2 should probably not be on your play list either.
You might like Fallout 3 or Oblivion.

Assassin's Creed II isn't all that linear, but maybe you guys are defining it in a different way than I am. I started tuning out, to be honest.

Yeah, I thought AC II sounded like it was up my alley. I'm not against story completely, I just usually don't care about it as much as the ability to go at my own pace and do what I want to do. The games I like work missions and plot into the gameplay organically, so it feels like I'm creating the story with my actions, instead of being told the story and prompted to connect the dots.
Haha/ It's funny: I do think the Wii has affected the way I experience games -- especially controls. I'm much more aware of control schemes that feel artificial or clunky, probably because I've been waving a wand around for the last three years. And I do appreciate that Nintendo makes gameplay king. The Zelda games probably have the best puzzles around, but they also have clever controls and really fun action elements. The problem is, Nintendo only makes about one good game a year (if that). I get tired of waiting. And I like to know what's going on in the gaming world, which means being able to play at least some of the big titles that only come to PS3/XB.
It is possible that you will like the game I am currently excited about, Red Dead Redemption, which comes out in April. It's supposed to be like Grand Theft Auto, but with cowboys.
I know! I'm at a loss to think of what games I own to loan you that you might like. I was thinking that you might like Fallout 3 because it's a shooter that lets you walk around at your own pace with a huge world to explore. Since you just got a PS3, I was presuming that the gaming style you keep referring to is GTA. And Fallout 3 might be the closest I have to that.
In contrast, you actually have characters in Bioshock and Dead Space that tell you what to do. Go there, do this and then (most times) come back here. Both of them have separate rooms or areas that you access after completing the previous area or room. Like, clear out this area, accomplish this task and then the next area is accessible.

I don't want to feel like I'm just following a script -- that's boring. It also, for me, puts a weird kind of pressure on doing everything right in one take. Uncharted made me feel like if I stopped to look around or try something that was outside the box I would spoil the meticulously planned cinematic experience the designers laid out for me. It was stifling.
Of course all games have a script of some kind. I just want to feel like I have the freedom to improvise. (Then again, maybe I just didn't like the gameplay -- a lot of games keep you on a narrow path, but if it's fun to play you don't mind it. So maybe, in the end, I just didn't think this game was consistently fun enough. The train level and the convoy level were great though. )

I want to be excited about that, but isn't it a sequel to a game that everyone said sucked (Red Dead Revolver)? Please tell me there's a reason this won't be like that.
Speaking of "everyone said it sucked," maybe I should just shut up and play GTA IV... It just looked like such a joyless chore to me.
They revamped the engine, so everything moves more naturally, and the combat system has also been improved. Reviewers who have had hands-on previews have positive things to say, so I'm optimistic.
I think Saints Row 2 flew under the radar, but I it's a great game. I certainly had more fun with it than GTA IV.
Basically, Saints Row 2 takes the idea of having a bunch of boring chores to do ala GTA and makes them over the top and ridiculous.
So rather than a side mission being picking up people in a taxi, you drive around on an ATV while you're in a fire suit and make things blow up when you touch them. The more things you blow up, the more points you get.
Rather than put out fires with a fire truck, you drive around in a sewage truck and 'lower the property value of the local real estate.'
It's a sand box game done right.
